In January 2025, Marta Moreira introduced our spicy wontons to readers of Guía Hedonista, Valencia Plaza’s food section, where the dish was selected as a dish of the week. For us, the feature was also an opportunity to introduce more people in València to the care behind a handmade wonton and to our approach to comforting, home-style food.
The dish begins with the wonton itself. We look for a delicate wrapper, a flavourful filling and careful hand preparation, one piece at a time. Once cooked, the wrapper should remain soft and silky while still holding the different elements of the sauce.
The version tasted by Valencia Plaza combined an aromatic ginger vinaigrette, house-made chilli oil, ground peanuts and coriander. Heat is not meant to overpower everything else. Acidity, fragrance, umami and chilli should work together so that the wonton and its ingredients remain present in every bite.
XiongHeJia opened its first location in Xúquer in 2022 and arrived in Russafa in 2024. Each neighbourhood has its own rhythm, but the idea behind our cooking remains the same: prepare food with care, preserve its home-style character and create dishes that people can enjoy together.
